The grapes are selected and harvested by hand. The must undergoes maceration for 12 to 14 days, followed by malolactic fermentation. The wine is then aged in French oak barrels for a period of 6 to 10 months and further refined in the bottle. Bright ruby red color, intense and persistent bouquet with notes of wild fruits that combine well with the aromas released by the wood of the barrels. Tasty and full-bodied, it highlights the exceptional persistence of the bouquet. Contains sulfites.

Vinified from grapes from selected plots. After maturation tests, the grapes were harvested at their optimum ripeness point. After total stemming and gentle crushing, maceration and fermentation took place, with pumping over in stainless steel vats at a controlled temperature of 28ºC, for around 12 days. We thus obtained intense, elegant wines with an expression of the place. After malolactic fermentation, the wines aged in French oak barrels for around 12 months. It was subjected to light filtration before bottling. In order to preserve its quality, it was bottled without cold stabilization treatment, which may cause deposits to form during aging in the bottle. Bright red color. Attractive aroma with notes of currant, black plum and mustard seeds. In the mouth it is fresh, very complete and elegant. It has present and fine tannins, very well integrated. Contains sulfites.

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.
