The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. The Alvarinho grapes, produced according to the concepts of organic farming where we protect the wine-growing ecosystem, promoting biodiversity and environmental sustainability, are harvested manually in the older vineyards with more than 40 years of existence in Quinta de Soalheiro, the First Vineyards. Currently, we still have a selection of Alvarinho grapes planted in Pé-franco. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation at controlled temperature. The fermentation takes place essentially in stainless steel (about 15% of the total volume is fermented in used oak barrels), with maintenance of the fine lees until the beginning of May, the month in which the bottling takes place. In this harvest we also integrate into the Alvarinho lot with a large oak kite stage. Citrine yellow color, elegant and full aroma that grows in the glass, becoming more and more persistent. The flavor is full-bodied, fresh and with great gustatory complexity. Contains Sulfites.
Quinta do Monte Xisto Magnum Red

The grapes were harvested by hand and transported to the cellar in 20 kg boxes. They were vinified in mills with treading on foot. Fermentation took place over 6 days in the mill with indigenous yeasts. This followed an 18-month stage in 600 liter kites. Intense ruby color, we bring the nose closer to the glass and the aroma is gradually discovered. First, the cistus, juniper, stands out, progressing to a universe of freshness seasoned by aromatic herbs. It is then alive and full of fruit. In the mouth it attacks with volume, a soft sphere surrounded by soft tannins slides for a long and fresh finish. Contains sulfites.

Ruby color of good concentration. The aroma is very elegant, slightly floral, with notes of wild fruit and some menthol. In the mouth, it is alive, and with acidity. Fresh fruit and spicy flavors are involved in a refreshing mineral profile. It presents a good volume of mouth, without being heavy, offering a perfumed, long and very balanced finish.
