Vinification in tanning at 28ºC with stalks. Aging 24 months in used wooden barrels. Red color with brownish tones, leather aromas, black fruits, black tea, violets and hazelnut. Austere taste, good acidity, presence of tannins, persistence present following the same concept as the old Periquita. Contains sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different batches aged in 225L oak barrels for 14 months. After bottling, the wine aged for another 6 months in the bottle. It is a ruby colored wine of medium intensity. In the aroma, it presents notes of fresh fruit with a predominance of red and black fruit. In the background, it is possible to feel the complexity of the spices from the barrel stage. In the mouth, it is fresh, with polished tannins that give structure and volume to the final set.

After an aging period of 19 months in barrels, we carry out a light fining and then bottling. The wine rested for 1 year before being marketed. Intense ruby color. Very appealing aroma, intense, fine and fragrant. Ripe red and black fruits stand out as well as floral notes supported by spicy nuances. Very soft attack, polished and elegant tannins. Organic wine: Manual harvest for small 15 kg perforated boxes, fermentation with cold technology, in a reductive environment, with controlled temperature around 16ºC. The grapes are pressed without crushing and without destemming under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entire wine is fermented in used French oak and remains there after a small racking over fine lees with periodic “battonage” stirring until the final blend is made. 6 months in French oak barrels, fermentation and agitation stage with fine lees, coming from the very sandy Upper Douro granitic soil at an average altitude of 575 meters. It has a citrus and mineral aroma, grapefruit notes, discrete exotic fruits and country flowers. Very persistent and fresh mouth with very lively citrus notes, resulting in a very elegant set.

"With grapes buying small parcels I make 1/2 barrels of wine and one of these wines is called the Golden Tooth, because the woman who sold me has a golden tooth." Quinta da Pellada Dente D'Ouro spent 16 months in used French oak barrels. The wine is composed of several native grape varieties, mainly Jaen and Baga. The grapes come from a very old vineyard with vineyards, which are between 80 and 100 years old. It is very important for Alvaro Castro to show that it is indeed possible to revive the tradition of blends of native fields and vines in his Dao area. The wine shines with ruby red with violet nuances. It shows a beautiful fresh and mineral scent, thin and incredibly complex, with notes of blackberry and plum. On the palate, a medium concentration, blueberry aromas, notes of spices and some earthy notes, plus unlikely silky tannins, absolutely attractive. A light red wine, elegant and very fresh, juicy, with mineral notes and berries, at a long, deep and very thin finish. Wonderfully multi-layered and with elegant precision. Simply sublime!
