The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Following selection on a mat of choice, 30% destemmed and 70% whole bunches were introduced into the vat, allowing the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation. in stainless steel. After aging 50% of used 4-year-old barrels of 400 L and 225 L of French oak, where it remained for 12 months. Wine with a deep ruby-violet color, aromas of rockrose surrounded by notes of forest fruits in a typical Douro setting. In the mouth seductive with some rusticity conferred by the stems of the grapes, combined with a more intense minerality resulting in a modern, long, fine and vibrant profile. Contains sulfites.
Beyra Biológico White
Grapes produced in organic production in vineyards planted in the plateau of Beira Interior, in high altitude granite soils. Vineyards planted exclusively with native varieties, perfectly adapted to the rustic climate caused by the altitude. Hand-picked grapes, reception without destemming and immediate crushing. Fermentation for a period of about 20 days with indigenous yeasts. Stage in stainless steel vats. The low productivity of granitic soils, especially in organic production, gave rise to this wine with an intense, fresh and very elegant aroma, with citrus notes in harmony with very discreet floral notes. Quinta do Serrado Reserva Red
Vinification is made from the selection of grapes created in Quinta do Serrado and Quinta do Mosteiro. All grapes are harvested by hand, harvested at the ideal time of maturation, combined to produce this superior quality wine, which aged for 9 months in French oak barrels. Grapes from a plot of the Quinta, the Corredoira vineyard. All grapes are hand-picked in 20 kg boxes. After a partial destemming and slight crushing, they go to the press where there is a slight contact between the skins and the must. Soft pressing and fermentation at medium/high temperatures in stainless steel vats. Finished fermentation in French oak barrels of 300 liters. Aged in barrels with total lees, with batonage, for 6 months. Vineyards with an average age of 35 years. Straw color, very complex and deep aroma. A lot of minerality with a light smoke, reveals citrus and fresh notes. Elegant and balanced palate, aromatic, with good volume and a very fresh and mineral finish. Contains sulfites.
