Grapes harvested by hand, reception with partial stemming and immediate crushing. Natural fermentation with indigenous yeasts in cement vats without temperature control, followed by malolactic fermentation in barrels. Aging for 18 months in French oak barrels, followed by aging in bottle for 36 months. Impactful, explosion of licorice / “liquorice”, black fruits, and spices, in harmony with very discreet notes of barrel. The Soalheiro Mineral Rose can be enjoyed as an excellent and relaxed aperitif, very adapted to the current tendency to consume wine by the glass, but also proves perfect to harmonize with lighter dishes such as salads, fish or seafood. One of the great concerns of the Soalheiro is to produce "wines to drink with pleasure", believing in the quality and tendency to appreciate wines with a more moderate alcohol. This Soalheiro Mineral Rose manages to have persistence due to Pinot Noir and elegance due to Alvarinho with moderate alcohol of 12%. To Alvarinho produced in high altitude vineyards where the caste has a more intense, fresh and mineral dimension, the Soalheiro has joined the Pinot Noir variety, also produced in the region and which presents a more aromatic and elegant dimension. In this way, a wine emerges at the same time aromatic and fresh, with a mineral end of mouth, and at the same time very greedy. Contains Sulfites.

This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyard consists of a wide range of grape varieties mixed in the same plot. In 2009, 3,500 kg of Touriga Nacional were harvested from a single 80-year-old vineyard, which implied making a choice of Touriga Nacional grape varieties in the large set of grape varieties of that parcel. Vinification was done in a cement vat with pre- and post-fermentative maceration. Aging for 1 year in 225 liter French oak barrels. Opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant. Long aftertaste. Contains sulfites.
Quinta da Carolina Red

Careful selection of grapes in whole bunch for the cement mill where they spontaneously ferment at controlled temperature. After a maceration period of about a week, the grapes are picked and the wine continues its fermentative processes in 500 liter French and Austrian oak barrels. Aging for 24 months in French and Austrian oak barrels, followed by a year in stainless steel, where it stabilizes naturally throughout the seasons. Bottled manually, by gravity without filtering or sticking and with minimal SO2 adjustments. It is a wine with a little extracted profile, we look for the elegance and freshness that an old vineyard with exposure to the north can give us. Open ruby color, shallow, with herbal notes combined with fresh fruit on the nose, deep and persistent in the mouth, with Douro and wooden aging notes. A wine to enjoy while young, but clearly aging. Advisable for decanting. Contains Sulfites.

MAIAS wine comes from the Quinta das Maias property, in organic farming, which is located at about 600 meters of altitude in the foothills of Serra da Estrela. The name derives from the yellow broom that covers the slopes of the mountain and here they are called «Mayas» because they bloom in the month of May.
The wines are characterized by the freshness of grapes from vines planted at altitude and by sandy granite-based soils.
This wine has as main grape varieties Jaen and Touriga Nacional, two of the best grape varieties in the Iberian Peninsula. The combination of these two grape varieties presents aromas of blackberries and sloes in perfect balance with the fresh and subtle texture.
