Mechanical harvest at night. Total stalking. Cold pre-fermentative maceration for 48 hours. Fermentation with controlled temperature (22ºC -28ºC) in stainless steel vats. Post-fermentative maceration for 5 to 10 days. Malolactic fermentation in stainless steel vats with French oak staves.50% of the wine in 400L French oak barrels for 4 months. Intense ruby color with violet reflections. Ripe aroma of red fruits well integrated with notes of spices and balsamic. Balanced, round palate, fruit and spice flavors. Good structure of well polished tannins. Contains Sulfites.

Born in the old vineyards of the Aragonêz, Trincadeira, Castelão and Alicante Bouschet grapes, the grapes for this wine are harvested and hand-selected, foot-stepped, fermenting in the open wineries of the winery, precisely the same methods used for over a hundred years in Herdade do Mouchão and that make Dom Rafael one of the most famous reds of the region. The grapes were harvested in 25kg plastic boxes, hand-picked from berry to berry, destemmed and trampled on foot in traditional presses, fermented in presses for a week at a temperature of 26ºC. Malolactic fermentation took place in new French oak casks, where the wine aged for 18 months. Dark ruby color. Fresh notes of black fruits on the nose without over-ripening, all well matched and balanced with new wood, good volume in the mouth with a refreshing acidity to balance the concentration of the wine, the tannins are present but ripe. Long and elegant finish with notes of vanilla and fruit. Contains sulfites.
