The grapes were harvested by caste and field, and at the time a rigorous qualitative selection was carried out. After gentle destemming and pressing, the grapes were transported by gravity to small stainless steel vats with temperature control, where they were vinified, caste to caste. The alcoholic fermentation occurred for about 8 days at an average temperature of about 27 ° C. 40% of the wine aged for 6 months in used French oak barrels of 225 liters, with the rest staged in stainless steel vats. After stage it was subjected to a light glue and filtration before bottling and was bottled without stabilization treatment by cold, which can cause the formation of deposit during its aging in bottle. This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyard consists of a wide range of grape varieties mixed in the same plot. In 2009, 3,500 kg of Touriga Nacional were harvested from a single 80-year-old vineyard, which implied making a choice of Touriga Nacional grape varieties in the large set of grape varieties of that parcel. Vinification was done in a cement vat with pre- and post-fermentative maceration. Aging for 1 year in 225 liter French oak barrels. Opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant. Long aftertaste. Contains sulfites.
Ribeiro Santo Vinha da Neve Red

Ribeiro Santo Vinha da Neve Red presents a complex aroma, with notes of dark fruits and aromas of forest flowers, mineral and spicy. In the mouth it is textured, with noble tannins in gifts, powerful and with a well integrated acidity and a long end. The harvest took place in the third week of September. The grapes were harvested manually, for small boxes of 18 kg, according to a careful selection of the best grapes in the vineyard, followed by a second choice at the entrance of the winery. The grapes were completely destemmed for a small granite mill, where they macerated two days at low temperature, before beginning the alcoholic fermentation, with indigenous yeasts, under controlled temperature. The alcoholic fermentation lasted about 3 weeks, with slight homogenization by walking. Once the fermentation was finished, it was decanted into new French oak barrels where it remained for 12 months. After the bottling and before leaving to the market, it staged a minimum of 6 months in fresh basement.
