José de Sousa Magnum Red

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.
Cortes do Reguengo White

Manual harvest, transport in 14kg boxes. Grapes are cooled in a cold chamber for 24 hours to 10ºC. Followed by sorting on a sorting table, destemming, pressing and cold static decanting. Fermentation in 500L barrels and aging for nine months. Rich and complex aroma, fruity with light floral notes, well integrated with the smoke from the barrel. In the mouth it is fruity, balanced, with a very present acidity and a long and fresh finish. Contains sulfites.

Selection of grapes in the cut and transport in boxes directly to the cellar. Vinification with crushing and total destemming. Fermentation in an open press with controlled temperature. 12 months in French oak barrels gave rise to this wine. Opaque red, of great aromatic intensity, very concentrated and complex. Aromas of ripe fruit, black plum and blackberry, with floral notes typical of Touriga Nacional. In the mouth it is full-bodied, smooth with fine and elegant tannins. Grapes harvested by hand and transported to the cellar in 20kg boxes, then stepped on foot in granite presses, without destemming and without adding yeast. As soon as the alcoholic fermentation ends, the wine is transferred to stainless steel vats. Aging for 10 months in stainless steel vats. It has an aroma with very ripe strawberries and cherries, fresh leaves, aromatic herbs and spices. In the mouth it shows good definition and well-focused acidity, concentrated body, fine tannins and long finish. Complex, round, deep, a red that deceives the eye, with rosé color but with depth that belies visual impressions. Contains sulfites.
