José de Sousa Magnum Red

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks.
