Sauternes, 40 miles south of Bordeaux city, is a village famous for its high-quality sweet wines. The Sauternes of Chateau Les Justices have always been highly appreciated by the best French restaurant for the high quality regularly maintained over time, Sauternes is a very long-lived. The vineyards are located in the municipality of Preignac, ideal environment for the development of noble rot (Botrytis Cincerrea), the vines have an average age of 25 years. The soil is stony (Graves) mixed with sand characterized by a clay part; subsoil consists of a layer clay-limestone which rests on the rock. The harvest is manual. Fermentation takes place in temperature controlled stainless steel tanks and lasts about three weeks. Followed by aging in vat at first, then in new oak barrels for 12/18 months.
