The vinification process begins with manual grape selection, followed by total destemming and cold skin maceration for 8 hours. With an intense citrine color and greenish reflections, it reveals aromas of ripe peach and orange accompanied by smoky notes and a hint of wet stone on the nose. The palate is notable for its volume and balanced body, ending with a crisp freshness that promises longevity. Ideal for pairing with fatty fish, all variants of cod, grilled white meats, and soft sheep cheeses, it should be served at 12ºC.

Discover Crosta Calcária dos Profetas White, a wine that emerges from the unique geological zone in the north of Porto Santo Island. This region, characterized by the compactness of the limestone, gives the wine a unique minerality, reminiscent of the aromas of the sea and offering a wine experience of another dimension.
Viticulture is carried out using traditional methods, with old vines, between 40 and 80 years old, planted in limestone soils, protected from strong winds by reed beds and walls. Winemaking is meticulous: after rigorous selection and staggered harvests, the grapes are pressed whole. The must is decanted into fractions without SO2, allowing pre-oxidation and spontaneous fermentation. The musts ferment on lees in stainless steel vats and barrels, where they mature for 11 months.
This wine has a pale yellow color and an intensely saline and mineral nose, with nuances of gunpowder and iodine. In the mouth, it is full and textured, echoing the aromas with a remarkable persistence. Perfect for pairing with flavors from the sea, especially scallops and clams, Crusta Calcária dos Profetas White is an invitation to explore the richness of limestone soils through a glass.
Horta Osório Sousão Red

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the plot and age of the vine, a specific protocol was performed for the Sousão variety. Using gentle vinification techniques, it was possible to extract all the varietal character of the variety but demonstrate its finesse. After malolactic fermentation, the wine aged in 225L oak barrels for 14 months. After bottling, the wine aged for another 8 months in the bottle. It is a ruby colored wine and almost opaque. In the aroma, it presents notes of black fruit, blue fruit and very resinous and balsamic. In the background, it is possible to feel the complexity of the spices from the barrel stage. In the mouth, it is very fresh, with polished tannins that give structure and volume to the final set and great storage capacity.

The wine remains during the aging in stainless steel vats with its fine lees, in order to guarantee some complexity and natural longevity of the wine. This delicious wine reveals an attractive floral and fruity exuberance, with fresh and citrus aromas, reminiscent of orange blossom, orange peel and rose. In the mouth, it shows strong minerality and the same exuberance that we find in the nose, in a lively, elegant and fresh style. It is the ideal partner for sushi, seafood and salads.
