Discover Bacalhôa Bical Vinhas Velhas 1931 White, a precious wine from Quinta da Rigodeira, acquired by Aliança Vinhos de Portugal in 2003. Located in the excellent wine region of Bairrada, between Fogueira and Ancas, this farm is home to notable plots, including a plantation from 1931, dedicated to the noble Bical grape variety.
This wine is distinguished by its unique aging: 60% of the batch fermented and matured for 12 months in new and one-year-old French oak barrels, while the remaining 40% benefited from the purity and freshness provided by stainless steel.
It has an extremely pale greenish yellow color, revealing an intense, finely delicate aroma, with touches of white-fleshed fruit and soft toasted notes. The balance is masterful, leading to a long and intense finish, where mineral notes stand out, adding complexity and promising admirable longevity. After manual harvesting, the grapes are transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once at the cellar, the boxes are unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which are transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225 L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it presents notes of ripe black fruit, woods and balsamic nuances characteristic of the terroir of the H.O, in perfect harmony with the spicy and complex notes of the Old Vineyards. In the mouth, it presents structuring tannins balanced by the natural freshness of the wine and in harmony with the notes of aging in barrel.

Manual harvest for 12 kg boxes. Cooling of the grapes in a refrigerated chamber for 24 hours to 10ºC. Manual selection on a vibrating sorting table, followed by direct vacuum pressing, with the whole grape, Blanc de Noirs technique. Cold decanting for 48 hours. Fermentation in temperature-controlled stainless steel tanks for 16 days. Bâtonnage weekly for two months. Pale salmon color. Exuberant aroma of fresh fruit, blueberry and floral notes. In the mouth, the excellent acidity gives it a notable freshness, it has good structure and a full and tasty finish.

Fresh grapes at their ideal point of maturation, picked by hand into 20 kg boxes, are transported to the cellar where they were subjected to a careful manual selection, destemming and gentle crushing. They are pressed in a pneumatic press and the resulting must, in a stainless steel vat, decant at 8ºC for 48 hours. The alcoholic fermentation took place at a controlled temperature of 12ºC for 30 days and at the end it was aged for 8 months with agitation of fine lees. A organic wine rich in fresh aromas of red fruit and vegetable notes of resin, pine and rockrose, with a rich and dense flavor with freshness and sweet tannins.
