Reception with destemming and immediate crushing. Fermentation in stainless steel vats of 18 tons capacity, with tanning at around 26ºC. Intense and prolonged macerations and partial malolactic fermentation in French oak barrels. Stage for 10 months in new and used French oak barrels. The stage begins to obtain a wine of great aromatic elegance, where the aromas of the Douro are not masked by the excess of barrel notes. Very smooth and well-ripened tannins, fresh and aromatic, very elegant, with an unusually long finish.

Fresh grapes at their ideal point of maturation, selected from plots 7 and 8 of the Levandeira vineyard, hand-picked into 20 kg boxes, are transported to the cellar where they are pressed as a whole bunch in a pneumatic press. Encruzado is an exclusive grape variety of the Dão region, is well balanced, aromatic and produces wines with a great longevity. The vines grow on slopes located between 350 and 400 meters in altitude. These vines fall under an integrated protection program and the application of herbicides is prohibited. Grape harvesting is done by hand, when the ideal point of maturity is reached, around mid-September. The harvest is collected in small boxes of 10 kg. This white wine was fermented in stainless steel at 13 ° C, while two thirds of its fermentation was completed in new French oak barrels, where it aged for 12 months. Quinta de Lemos Dona Paulette Encruzado presents minerality and wood that gives some complexity. It also has resin plants, eucalyptus, mint, nuances of hazelnut and tamarillo. It is fresh, with acidity well integrated into a structured body of medium volume.

Grapes are harvested by hand. After pressing, before fermentation, the must is clarified. Fermentation takes place in a stainless steel tank at a low temperature and in two egg-shaped deposits in our innovation area, one stainless steel and the other cement, so that the final batch, due to the constant battonage in the fine lees, transmits complexity and taste persistence superior to what we normally find in this variety. Bright lemon yellow color, elegant aroma marked by mineral and floral notes. Dry and fresh flavor, revealing the elegant side of the Loureiro variety, which always has a persistence of well-marked acidity. Contains sulfites.
