Grapes harvested by hand in small boxes and transported to the winery located on the farm itself, the transportation time being very short. Total destemming. Very short skin maceration. Long fermentation at low temperature: 20 ° C. Total malolactic fermentation. Aging in stainless steel for 9 months followed by aging in bottle for 6 months. Young wine with a bright ruby color. Aromas of ripe wild fruits with nuances of cherry and black pepper. Fine and velvety tannins that harmoniously contrast with a well-creased and fresh acidity. MAIAS wine comes from the Quinta das Maias property, in organic farming, which is located at about 600 meters of altitude in the foothills of Serra da Estrela. The name derives from the yellow broom that covers the slopes of the mountain and here they are called «Mayas» because they bloom in the month of May.
The wines are characterized by the freshness of grapes from vines planted at altitude and by sandy granite-based soils.
This woodless white wine is dominated by the Malvasia Fina and Encruzado grape varieties, which contributes to the floral and plum notes with fresh and elegant aromas.
Vinha d’Ervideira White

Mechanical and night harvest. The process goes from caste to caste. Antão Vaz grapes are destemmed, lightly pressed in a vacuum. After defecation, they ferment at a controlled temperature between 10o and 12oC. Arinto grapes are destemmed and sent, without crushing, to “vinimatics”, for skin maceration between 6 and 10 hours. Subsequently, they are pressed and sent to the cold room. Wine of citrus tones, with notes of tropical fruits, light quince jam and mineral notes. Elegant in the mouth, it shows good acidity and a striking structure, which prolongs the tasting. Contains sulfites.
