Matured with the Solera process, then aged in American white oak barrels, which gives it a very soft and round aroma, but in some of these barrels walnuts, almond husk and peach were added and then the rum ripened in them giving it a unique flavor.

This rum is the result of these explorations, offering an exceptional and unique flavor profile.
Made from molasses, with a one-week fermentation and distilled using a blend of Port Mourant pot still and column still, the rum was distilled in 2007. It aged for 13 years in 200L bourbon barrels in the tropics, followed by 2 years in 350L Ferrand casks in Europe, gaining deep and rich complexity.
On the nose, it is intense and rich, with pastry notes of cocoa and almond, vanilla, and lime peel. The palate is rich and oily, following the nose with hints of flowers and orange, tobacco, raisins, berries, almond, and hazelnut, complemented by deep notes of balsamic and molasses, almost smoky, with leather and medicinal ginseng. The finish is very long, spicy, and fresh, with pepper, cinnamon, nutmeg, licorice, and chocolate.

The nose is juicy, typical Barbados style; and reveals notes of roasted coconut, fudge and vanilla. 5 year old plantation can be enjoyed alone, with ice or in cocktails.
