Billecart-Salmon Brut Sous Bois White
Brut Sous Bois has a complex aromatic definition and a character related to winemaking in oak barrels. Crystalline golden yellow and radiant color with sparkling lights, animated by fine and regular bubbles. The olfactory impact of a wealth of harmonious expressions (dried fruits, fresh citrus fruits and white fruits) associated with finely buttery seductive notes. In the mouth is an explosion of flavors (toasted notes of buns with milk, toffee), conducive to the flourishing of great Champagne wines. Contains sulfites.
Hehn Reserva Bruto White
Manual harvesting. Pressing whole grapes with separation of the first fraction of the must. Base wine fermentation after storing the must for 15 to 20 days at a temperature of 17-20°C in stainless steel tanks with a cooling jacket. Minimum 10 month aging on the lees. Medium intensity straw yellow color. Dried fruits, particularly walnuts in the basket, originate from the long stage. Full, round and fresh, with good volume. Soft and very well integrated. Contains sulfites.
Hehn Bruto White
The grapes, harvested in 20 kg boxes, were gently crushed, without destemming, in a pneumatic press, and the must was immediately pumped into stainless steel fermentation vats, where the fermentation of the base wine took place. The wine was then bottled and placed in a cool cellar for the second fermentation according to the classic method, after aging in the bottle, the “dégorgement à la glace” is carried out. It has a lemon yellow color. It shows delicate notes of peach and apricot supported by a citrus freshness and a smooth brioche. Very fresh and crunchy, fruity and elegant, leaving a delicate peach flavor in the mouth. Contains sulfites.
Luis Pato Baga Bruto Rose
Created in vines planted in clay-limestone soils, with the Baga variety. Vinified from open spout with very light pressing in vacuum press, in order to obtain a yield in must that does not exceed 60%. A fermentation in stainless steel vats follows. As the second fermentation takes place in the serving bottle, the wine stagnates between 3 to 6 months on the sludge before carrying out the necessary operations to finish it. Ideal wine to accompany several menus, among which stands out the roast suckling pig, even if accompanied by orange, since the lack of tannins does not collide with the citrus flavor of the orange. It also harmonizes with fish, seafood and meats roasted in the oven, because it has a high acidity that balances with the flavors of these delicacies. It should be served at about 8 ° C in order not to destroy the aromas of the grape variety. Contains sulfites.
