Porto Cálem Vintage 2011 results from exceptional single-year harvests due to the high quality grapes obtained in ideal climatic conditions. After 2 years in oak barrels, Vintage Port wines are bottled in the cellars in Vila Nova de Gaia, on the banks of the Douro River. Vintage improves with age in the bottle for decades. It has an impressive purple color and reveals strong aromas of fruit (especially raspberries and blackberries), with firm tannins and a balanced structure. Offley Boa Vista Vintage 2011 Ruby
After gentle crushing with partial destemming, a very intense maceration was followed during the period of alcoholic fermentation, with which it was intended to obtain the highest possible extraction of the quality constituents in the films. This maceration is obtained through the steps of traditional granite winches, with controlled temperature at about 28ºC. During this phase not only a strict control of the fermentation temperatures, but also of the density was chosen, thus choosing the ideal moment for the addition of the neutral wine spirit necessary for the stop of fermentation. Very intense, of an almost opaque dark red . Aromatically very rich, the black fruit like plum, the balsamic aromas of resin and cedar, and some floral notes of the "subois", as well as spices such as cloves and nutmeg, stand out on the nose. In the mouth it has an excellent volume, good acidity, lively but well integrated tannins, and notes of black fruit, in particular the plum again, but also cherry. Its end is long and intense. Graham's 'The Tawny' is a Port Reservation made from a special lot, from several wines aged in hooves in the cellars of the company between 7 to 9 years. The balance between the ripe fruit and the nuts resulting from aging in the hull is noticeable, where the wine acquires a soft amber tone. Golden amber color, soft aromas of toasted almonds with notes of orange peel and spices. Well structured and complex, the mouth is inviting and captivating, with a long and persistent finish of mouth.
