The grapes are picked by hand and sorted twice. They are lightly pressed in a pneumatic press at low pressure to obtain a slow extraction. The grapes were manually harvested into 25kg boxes and immediately transported to the cellar where they were stored in the cold chamber for 24 hours. This was followed by grape selection and pneumatic pressing and decanting. The alcoholic fermentation started in a stainless steel tank with selected yeasts. After fermentation starts, the must was transferred to 500L barrels. The wine was kept in contact with fine lees. Aging for 8 months in barrels with battonage. At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Outstanding for its exceptional features, the Sandeman Porto Vintage 2016 is a wine that will age in the bottle for 30 or 40 years.
