Quinta de Ventozelo Vintage 2018 Ruby
Grapes harvested manually, with a very careful selection. After manual harvesting, the grapes were carefully inspected and destemmed. An intense maceration was then carried out in the first 48 hours to extract all the good components from the films, followed by fermentation in stainless steel vats with temperature control. This was interrupted with the addition of brandy at the exact moment, followed by an aging process under careful conditions of minimal oxidation. Vintage de Ventozelo expresses all the typical terroir of cooler years and later vintage. Very heavily colored, with bluish tones. This vintage evokes the uniqueness of a very own and distinctive Quinta, with a characteristic aroma of rock rose and rosemary, combined with very ripe fruit. Fresh and silky, with robust tannins and a very persistent wild finish. Contains sulfites.

Manual harvesting with selection of berries and cooling of the bunches. After the desired temperature, soft pressing with low pressures and 100% fermentation in small stainless steel vats with controlled temperatures. 100% stainless steel aging for 9 months. In the mouth it is a very concentrated, yet smooth wine that reveals notes of floral, ripe passion fruit, grapefruit, lime peel. Maturation 20% in barrels and 80% in stainless steel tanks for 9 months. This Cabernet Sauvignon has a bright ruby color with violet highlights. Its intense aromas of ripe red fruits such as plum and raspberry, touches of cocoa, tobacco and soft coffee. It is a wine of medium body with soft tannins, balanced with marked end. Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration.
