Chryseia 2021 was produced from a rigorous selection of grapes from Quinta de Roriz and Quinta da Perdiz, properties of Prats & Symington. As in all previous editions of Chryseia, there was also the usual contribution from Roriz's neighboring vineyard, Quinta da Vila Velha, privately owned by Rupert Symington. It symbolizes the union of the noble Portuguese wine heritage with the no less rich Bordeaux oenological tradition.

Quinta da Fata is located in the demarcated Dão Wine region. The slight slope to the south gives it a sunny exposure that benefits the wine and makes it particularly pleasant. In addition to the vineyard, the farm has gardens, large lawns and wooded areas. Among the many trees, an imposing century-old lime tree stands out. Both the lime tree and the tower with the old water tank are clearly visible and allow you to easily identify the farm from afar.

The grapes are picked by hand and pressed directly. All handling is carried out in a carbon dioxide atmosphere to protect the delicate aromas of the Grenache grapes until the start of fermentation, which is carried out at low temperatures (15-18ºC). Aging on fine lees for several weeks before bottling. Pale pink color with shades of gray and white. On the nose, aromas of red fruits mix with aromas of small red fruits. In the mouth, a slight pearl gives the wine all its freshness and enhances the fruit.

Manual harvesting for 15kg boxes. Total de-stemming with slight crushing after selecting the grapes. Fermentation in stainless steel vats at controlled temperatures. Partial aging (60%) for 12 months in used French oak barrels. Notes with floral notes and bergamot from Touriga Nacional and ripe red fruit, to which are added the light and toasted notes of the barrel. Mouth with good acidity, volume and present but soft tannins.
Monte da Raposinha Reserve Chardonnay White
The bunches were harvested by hand and selected on the sorting mat. After being de-stemmed, a 6-hour pre-fermentative cold maceration followed. Fermentation took place slowly in 400 and 500l French oak barrels, where the wine then aged for around 9 months. Notes of orange peel and ripe citrus, roasted apple, light buttery and integrated barrel notes. in the mouth it has good volume, balanced acidity and a surprisingly fresh finish.

The grapes were harvested manually, gently de-stemmed and pressed after careful sorting in the cellar. Fermentation took place in stainless steel vats and used 400L and 500L oak barrels. Aging with fine lees and bâtonnage. Elegant orange and lemon peel, white flowers and peach aromas. The presence of barrel aging is discreet. In the mouth it is creamy, with crisp acidity and minerality giving a long finish.

Aged for 23 months in used French oak barrels and 1 and a half years in bottle. Notes of black and red fruit well integrated with notes of spice and slightly smoked barrel. in the mouth it has delicate tannins, good volume and very present acidity, which makes it simultaneously powerful and elegant.

Malolactic fermentation and aging in stainless steel tanks. Deep color, aroma of ripe wild fruits and a slight note of eucalyptus leaves with volume, good acidity and present but soft tannins, it shows surprising freshness.

Spontaneous fermentation in 400l and 500l French oak barrels. 7-month internship with lipstick. Wine with excellent acidity, typical of the variety, combined with the creaminess that comes from the battonage. Citrus aroma, green apple, with some minerality. A light smoky note adds another complexity to the wine.

Manual harvesting for 15kg boxes. Light pressing of whole bunches, after careful selection of the grapes. Spontaneous fermentation in used French oak barrels. Aging for 7 months in barrels with batonnage. Light rosé wine, with a very open salmon color, dry and with excellent acidity combined with the soft creaminess given by the work of the fine lees. The aroma reveals very fresh red fruit, peach, light floral and vegetal surrounded by notes of discreet barrel.

Manual harvest in 15kg boxes. Total de-stemming, without crushing the berries, after careful selection of the grapes. Spontaneous fermentation in stainless steel mills with minimal intervention. Malolactic fermentation and aging in stainless steel tanks. The Trincadeira grape variety in the Monte da Raposinha terroir made it possible to create a red wine with a low alcohol content, open color, good acidity and very soft tannins. The aroma reveals fresh red fruit and dry tobacco leaf.

De-stemmed grapes, slightly crushed in a pneumatic press, the resulting must being decanted into 2,500 liter stainless steel vats for 24 hours. Rola Viosinho is a white wine that reveals the typicality of the grape variety. In the mouth, this wine reveals itself with an intense acidity, appearing a characteristic minerality of the variety, thus creating an extremely fresh and vibrant wine. Around 1150 bottles were produced.

De-stemmed grapes, slightly crushed in a pneumatic press, the resulting must being decanted into 2,500 liter stainless steel vats for 24 hours. Rola Gouveio is a white wine that reveals the typicality of the grape variety. The aroma presents notes of tea, in the mouth it reveals very good body and longevity. Balanced wine with good acidity. Around 1300 bottles were produced.
