Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to fermentation vessels using a peristaltic pump. Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. A period of post-fermentation maceration is carried out to promote the extraction of tannins from the seeds — complementary to the tannins from the skins — in order to favor the structure and accentuate the aging potential. Wide aromatic expression: forest floor, bush, pine needles and discreet fennel notes, later giving way to black fruits (blackberry, blueberry), black plum and traces of licorice. In the mouth some chocolate, mushroom/truffle and hint of smoked, showing the good integration of the barrel. Monumental in the mouth, with several layers providing fascinating complexity. Refined tannins combine with good acidity (discreet, but present), enhancing the formidable structure. Eminently gastronomic wine with great potential for long aging.

The white icon of the company, this is a wine from the oldest vineyard in Antão Vaz that the company owns, with very small productions, but with unparalleled quality and concentration. It is a grape variety with an Alentejo accent, consensual, rustic but well adapted to hot, sunny climates and the gentle slopes of Vidigueira. This Antão Vaz is fermented and aged for a long time in new French oak barrels. A rarely released wine, with a limited production and with a distinct profile from the ex-libris variety of Vidigueira. Very fine and elegant notes of ripe tropical fruit, marked minerality mixed with citrus notes. White spices and subtle toast. Structured, very fresh and with a long and elegant finish. It also has a special appetite for an excellent evolution in the bottle.

Manual harvest into small 15 kg perforated boxes, fermentation in a reductive environment, using very gentle crushing and pressing processes under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine.
