The grapes are selected and harvested by hand. The must undergoes maceration for 12 to 14 days, followed by malolactic fermentation. The wine is then aged in French oak barrels for a period of 6 to 10 months and further refined in the bottle. Bright ruby red color, intense and persistent bouquet with notes of wild fruits that combine well with the aromas released by the wood of the barrels. Tasty and full-bodied, it highlights the exceptional persistence of the bouquet. Contains sulfites.

The mystery of the box found inside one of the walls of Casa da Passarella is finally solved. The story begins in 1942, when a box is hidden in one of the rooms of Casa da Passarella, containing a handwritten document with instructions to be opened 50 years later. The document also contained a last will: that all the values
stored in the box should be distributed ny the poor. The truth is that neither of these things happened. Only in 2010, when the Gouse suffered works, the box was found and opened. And there was nothing inside. The investigations went forward, without ever having unraveled the mystery. When resignation seemed to overcome persistence, a specialist in the unusual was called to the scene: " the box was indeed replete," explained Professor K.Noronha, "but not tangible, material things, an extraordinary essence that, reacting with the times to come, would bring happiness through wine to all who made art and profit. When we were preparing the land for planting in 2004 we came across 1 ha of land that had a completely different soil from the rest of the farm, deeper, less stony, more fertile and with greater availability of water. This parcel is in a more sheltered area, with fewer hours of sun exposure. It was evident to us that although we were facing letter A land (considered optimally to produce Port wine), we had an opportunity to produce excellent white grapes. Just like in the red we tried to make a personalized wine with an expressive aroma and with a depth and freshness that characterize all our wines. Contains Sulfites.
Whispering Angel Côtes de Provence Magnum Rose

Grapes grown from some of the most choice land in the surrounding region of La Motte en Provence, consisting primarily of Grenache, Cinsault and Vermentino. Harvesting at sunrise to noon. The grapes which are used to make Whispering Angel are sorted optically. Destemming and slight crushing at 7-8ºC to avoid oxidation. Both the free run juice and pressed juices are vinified in stainless steel. "Batônnage" is twice weekly. Temperature controlled. Contains sulfites.
