The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% with destemmed and 70% whole bunch were introduced into the vat, allowing the extraction of color compounds and aromas more smoothly during 3 days of alcoholic fermentation totally in stainless steel vats, being bled from each vat. a small volume of must completing both alcoholic and malolactic fermentation in used French oak barrels. Grapes harvested manually in small boxes and transported to the winery in a short time. Pelicular maceration followed by fermentation with the films for a few hours.
