The grapes from several very old vineyards in the Alto Douro Vinhateiro (Mêda) were pressed in whole bunches, in order to extract the freshest and most vibrant must possible. Keeping the origin of each vineyard, the musts followed the alcoholic fermentation in new 500L French oak barrels. Fermentation process from indigenous yeasts, brings more complexity and character to wines. Long maturation on total lees (12 months). Malolactic partials make up the Burgundian-inspired route. Concise, elegant, frank, expressive. Fresh citrus notes with great notoriety, lime, grapefruit, flower, white fruit, irreproachable trace of pure minerality. Wide mouth, serious, exuberant acidity, salty, long trace. Contains sulfites.

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Soalheiro come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. The bottling takes place after the batonage and the stage in the fine lees. Citrine yellow color, aroma with the profile restrained and elegant with mineral notes and dry finish.
