The grapes from several very old vineyards in the Alto Douro Vinhateiro (Mêda) were pressed in whole bunches, in order to extract the freshest and most vibrant must possible. Keeping the origin of each vineyard, the musts followed the alcoholic fermentation in new 500L French oak barrels. Fermentation process from indigenous yeasts, brings more complexity and character to wines. Long maturation on total lees (12 months). Malolactic partials make up the Burgundian-inspired route. Concise, elegant, frank, expressive. Fresh citrus notes with great notoriety, lime, grapefruit, flower, white fruit, irreproachable trace of pure minerality. Wide mouth, serious, exuberant acidity, salty, long trace. Contains sulfites.

Textura da Estrela Jaen comes from a single plot in Vila Nova de Tazem (Serra da Estrela sub-region). Vineyards aged 28 years in granitic soils, sustainably treated, without herbicides, have been converting to organic certification since 2020. This Jaen fermented with indigenous yeasts only in cement vats with 35% whole bunch followed by 30 days of cuvaison. After aging the 1st winter in cement, it spent 6 months in French oak barrels. Naturally stabilized. Open color red with mineral and stone powder character, typical of cement tanks. Slight pepper and delicate fruit. It shows elegant tannins and is marked in the mouth by the granitic minerality, which often contributes to its peppery side. Long and precise acidity. With the potential to turn out to be different in a few years. Contains sulfites.

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essence of small-scale winemaking has changed in over two thousand years. In this process, the grapes previously crushed on foot are stoned by hand on a ripening table. The fermentation takes place with 30% of the stalks, in hoists with an average capacity of 1,600 liters at a temperature that is around 28ºC, being controlled by watering the hoists 4 times a day. The fermentation takes approximately 8 days, leaving the wine in maceration after fermentation until November. After the pressing of the masses, part is staged in hoists for a period of around 16 months in which an olive oil film is used to prevent oxidation. The other part was stamped on 500-liter brown casks. At the same time, the rest of the stall was fermented in a "task" (small carving with capacity of 300 liters) with a little must. This product is called ripening wine because it is the result of this ancestral technique of manual destemming. This wine is used in the final lot as "salt and pepper". Color reddish brown, aroma of nuts, spices (black pepper, cloves), clay, liqueur, evolved but not oxidized. Taste robust, dry, good acidity, very balanced, tannins present but soft. Long and persistent end of test. Contains Sulfites.

Encruzado is an exclusive grape variety of the Dão region, is well balanced, aromatic and produces wines with a great longevity. The vines grow on slopes located between 350 and 400 meters in altitude. These vines fall under an integrated protection program and the application of herbicides is prohibited. Grape harvesting is done by hand, when the ideal point of maturity is reached, around mid-September. The harvest is collected in small boxes of 10 kg. This white wine was fermented in stainless steel at 13 ° C, while two thirds of its fermentation was completed in new French oak barrels, where it aged for 12 months. Quinta de Lemos Dona Paulette Encruzado presents minerality and wood that gives some complexity. It also has resin plants, eucalyptus, mint, nuances of hazelnut and tamarillo. It is fresh, with acidity well integrated into a structured body of medium volume.
