Lightly pressed grapes with whole bunch. The resulting must was fermented in used barrels, followed by regular batonnage until the date of bottling. Tartaric and protein stabilization achieved naturally during an extended 10-month aging in a barrel. 1440 bottles were produced. Aromas of red, floral fruit. Suggestions of vanilla, brioche and spice add aromatic complexity. In the mouth it shows to be an elegant wine, full of minerality and freshness, reflecting well the calcareous soils from which it comes. It is simultaneously a deep, structured and complex wine. Contains sulfites.

Manual harvesting with selection of berries and cooling of the bunches. After the desired temperature, soft pressing with low pressures and fermentation in small capacity stainless steel vats at controlled temperatures. 100% stainless steel aging for 9 months. Clear citrus color to straw. Exuberant aroma with citrus and tropical notes in evidence. Notes of grapefruit and white stone fruits. Fresh flavor with a vibrant, intense and full-bodied acidity. Reveals aromas of ripe grapefruit, some tropical fruit and peach. Very clean wine, with mineral notes are evident in this wine making it very elegant and concentrated, with a long and persistent finish. Contains sulfites.

With the most modern technology and total temperature control we eliminated curls that were not in perfect condition, the grapes were vinified with total destemming, followed by soft crushing and skin maceration for about 12 hours. After this period over an inert atmosphere the press was pressed in a penumatic press, followed by a period of clarification of the must of 24 to 48 hours depending on the variety and maturity stage. Vinification in hyper-reduction, fermentation at 12ºC and transfer under controlled atmosphere. The wines were sucessively stamped in stainless steel and French oak barrels on bottonage until bottling. Contains Sulfites.
