Chão dos Eremitas Tinta Carvalha Red

100% Tinta Carvalha. Tinta Carvalha is a grape variety from the old Alentejo strain, 1/2 sister to Castelão and Moreto and daughter of the crossing of the Sarigo x Alfrocheiro Preto grape varieties. The grapes, on granite soils and under a certified integrated protection regime, are selected on a sorting table, 30% of the whole bunch and 70% destemmed, falling by gravity into the vat. Spontaneous fermentation and 40-day maceration in film, followed by a 12-month aging in stainless steel vats. Very open, ruby color, intense fresh nose, notes of bitter red fruit, pomegranate notes of graphite. Very fine, elegant tense attack with lots of depth and tension. A red that shows that the Alentejo can be something else.

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden on foot and destemmed by hand on a table called "table of ripanço". Afterwards, a small part of the must, the films and the stench are fermented in the clay pots, and another in the wine press. The remainder of the brand is fermented in stainless steel vats. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months in French and American oak casks. Red color loaded with scented dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, tannins present but soft. Long end of test. Contains Sulfites.

Quinta da Pellada Casa has aged in French barrels of eight years for about 28 months. This wine is another of the lessons of the winery in the terroir of this issue: this portion of Pellada is the "most exposed" of the three and has a more compact soil with some clay besides granite, the intense presence of pink / white quartz and the one that has more hours of sunshine per day. Intense grená color, consisting of bergamot in tea, violet in orange peel and fruits with cocoa and vanilla. Very expressive, elegant and generous tannins. Contains Sulfites.
