To create The Jim Beam Devil’s Cut, a new and extraordinary experience in the world of bourbon, Jim Beam has developed a process that removes the remaining whiskey from the wooden barrels after they have been emptied. This extract of the barrel is treated until it develops the balance of the bourbon notes, and then mixed with 6-year-old bourbon and bottled to 90 proof. The result: a premium, robust bourbon with color depth, aroma and character.

Like House Stark, Dalwhinnie distillery are northerners through and through. One of the highest and coldest distilleries in Scotland, the extreme weather and cold temperatures experienced at Dalwhinnie are reflected in the fact that this single malt is best served chilled, or over ice, to highlight its signature honey and spice characteristics. Aged in ex-bourbon casks, this light gold single malt gently opens to flavours of honeyed figs and delicious malt balls, finishing with rich fruitcake sweetness. Like House Stark, Dalwhinnie Winter’s Frost is loyal to the flavour profile that the distillery is known for, and not only survives the cold of winter, but uses it to its advantage.

Sweet vanilla, ripe pear and toasted oak lead among thorns of oak spice and crème brûlée. Orange zest, honey-soaked toast and canned peaches combine initially before more vanilla and oak spices emerge. Dark chocolate and oak add a nice bitterness underneath. A lightly dry finish lasts a long time with a touch more of toasted oak.
