Manual harvest. Strict manual selection of bunches. Total stalking, followed by pre-fermentation maceration. Gentle pressing. Static decantation. Fermentation in oak barrels and subsequent aging on total lees for 20 months. Wine not filtered or cold stabilized. It can create deposit. Straw color, fine, intense, complex and deep aroma. Apricots, yellow flowers, aromatic herbs, spices and mineral aromas stand out. Creamy attack, fine, precise and very balanced acidity that enhances the aromas in the mouth. Unique texture. Very long finish. Contains sulfites.

Elpídio Superior Magnum White
This sparkling wine remains in the cellar for 48 long months at a constant temperature of 12ºC. The Chardonnay shows refinement and freshness, the Arinto with exquisite acidity highlights the potential of the sandy-clay soil of Vinha das Andorinhas located in Pedreira de Vilarinho. To obtain the structure and preservation potential essential to this exceptional Elpídio Superior Sparkling Wine, only the juices from pressing the whole grape core are used, after separating the first and last extractions. The grapes are left to ferment for the first time, transforming the juice into base wine. Remaining in the tank allows the development of the complexity of the aromas and the structure of Elpídio Superior Sparkling Wine. The elegance and delicacy of the aroma suggest soft notes of white-fleshed fruits, reminiscent of pear and apple, with light citrus fruit and some toast. The persistence and creaminess revealed by the long aging, wrapped in a perfect freshness and mousse, contribute to a deep and sophisticated finish. Contains sulfites.

Fermentation in stainless steel vats (controlled temperature to preserve the aromatic matrix). It spent 2 years in a stainless steel tank. After bottling, it remained resting for 6 months in a controlled humidity and temperature environment (10/14 ºC). Notes of black pepper and black fruits, plum and blackberries. Intense, impressive on the nose. Fine tannins, strong astringency. Structured wine, excellent freshness and long finish. Aging potential. Contains sulfites.

On the nose, spiced with wild herbs. Rich and luscious in the mouth, with flavors of ripe berries and dried tobacco leaf, with a long finish.

Vinhas da Teixuga Red is a monovarietal from Jaen, one of the typical grape varieties of the region, and shows the full potential of this variety, largely due to twelve months in French oak barrels, carefully selected to highlight the special characteristics of the variety. With outstanding gastronomic potential, it has a distinctly ruby color, with intense aromas of red fruits, jams and spices. Arouquesa veal, baked cod or grilled sardines are perfect companions.
