Soalheiro Granit Magnum White

The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Soalheiro come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. The bottling takes place after the batonage and the stage in the fine lees. Citrine yellow color, aroma with the profile restrained and elegant with mineral notes and dry finish.

The grapes were harvested manually and transported to the winery where they were de-stemmed. Alcoholic fermentation took place in a stainless steel tank at 26–27°C.
