Harvesting at sunrise to noon. Optical grape sorting. Destemming and slight crushing at 7-8ºC to avoid oxidation. 90% free run juice. 10% first slight pressing. No maceration. Alcoholic fermentation in new and second year demi-muids (600L Barrels). 10 months burgundian style " Bâtonnage" twice weekly. Individual barrel temperature control. Contains sulfites.

Pinot Noir wines are fruity and full-bodied; the Chardonnay wines are of considerable distinction. The red wines from Clos Colin in Bouzy offer an excellent balance, with a rich, crunchy flesh.

Hennessy VSOP
With pleasant aromas, a delicate balance and a long lasting finish. On the nose, mild spices are immediately present, such as vanilla, cloves and cinnamon. Maturation in French oak barrels creates an aroma secondary to toasted notes.
