Dona Ermelinda Reserva Red
Wine with garnet color almost opaque, with aromas to remember black fruits, spices and smoke, with some compote due to the great maturation reached. In the mouth is a dense, full wine, with great structure, tannins present but integrated and soft. Persistent and very pleasant long finish. Fermentation in stainless steel vats with controlled temperature followed by prolonged skin maceration of 20 days. Stage of 12 months in French oak barrels followed by 8 months in bottle. Intense ruby color, notes of blackberries, nutmeg, licorice and a hint of black pepper. In the mouth it is rich and complex, where notes of ripe black fruit and spices predominate. Persistent ending. Total destemming and separate fermentation in small mills, with mechanical step. Malolactic fermentation in partially new French Oak wood and stage up to 18 months. Dark ruby color, dense, chemical and hot aroma with palate alive, rich in red fruits, spicy, seductive in silky texture. Long end of test with very good connection between Cabernet Sauvignon and Merlot and the joy conferred by Petit Verdot.

Manual harvest at the optimal point of maturation, with accurate selection of bunches. Fermentation takes place in stainless steel tanks with controlled temperature. Aging for 3 months in bottle before going on sale.Garnet color with tiled hints, indicating evolution, but we also know that the color of Sangiovese evolves very quickly. Aroma with complexity from the aging in barrel and bottle, showing however that the wine is still very young and has several years of life ahead of it. Mechanical harvest at night. Total stalking. Cold pre-fermentative maceration for 48 hours. Fermentation with controlled temperature (22ºC -28ºC) in stainless steel vats. Post-fermentative maceration for 5 to 10 days. Malolactic fermentation in stainless steel vats with French oak staves.50% of the wine in 400L French oak barrels for 4 months. Intense ruby color with violet reflections. Ripe aroma of red fruits well integrated with notes of spices and balsamic. Balanced, round palate, fruit and spice flavors. Manual harvest and direct press with whole bunch. Fermentation took place in stainless steel vats, followed by aging on fine lees for 8 months.
