Vinification in tanning at 28ºC with stalks. Aging 24 months in used wooden barrels. Red color with brownish tones, leather aromas, black fruits, black tea, violets and hazelnut. Austere taste, good acidity, presence of tannins, persistence present following the same concept as the old Periquita. Contains sulfites.

Vineyards installed on red soils derived from brown or crystalline limestone, with patches of schist, benefiting from a Mediterranean climate with high temperature ranges and hot, dry summers. After the necessary early interventions during the growing season, the grapes were harvested manually and transported to the winery in small boxes. Once malolactic fermentation was completed, the wine was partially aged for 12 months in 2nd and 3rd year French and American oak barrels. After bottling, it rested in bottles for 2 months in our cellar. To preserve all its qualities, this wine has not been stabilized and can naturally deposit. Clear wine, violet red, aromas of cherry, blackberry, spices and floral notes. Structured, balanced and voluminous, with a full body and persistent finish. Contains sulfites.
Vicentino Gama Neblina Reserva White

Planted in clayey-schist and sandy loam soils, with low yield potential, the Vicentino grape varieties boast their best attributes. The low productivity imposed by the land will act as a stimulus to the quality of the grapes that are formed, promoting an ideal concentration of organic acids, sugars and phenolic compounds. Achieving this balance between quantity and quality, together with a mild climate, makes it possible to obtain a raw material of excellence. Fermentation in 350 liter barrels, followed by aging on lees for 9 months. One of the wines that most reflects the perfect symbiosis between the Atlantic, the soils and the vineyards is Vicentino Reserva Branco. In this wine, the vegetable and tropical fruit notes of the Sauvignon Blanc are enhanced and thickened by the barrels in which it ferments, giving rise to this fresh but complex wine, with hints of vanilla. These sensations persist on the palate in a smooth and enveloping taste. Contains sulfites.

Manual harvest for small perforated boxes of 20 kg, soft pressing of the whole bunches without destemming, in order to preserve the integrity of the grapes as much as possible, natural fermentation with indigenous yeasts at a controlled temperature between 16-18ºC in order to obtain the maximum expression of the combination of caste, soil and climate. After alcoholic fermentation, the wine was in contact with the fine lees, having been raised and stirred for about a month in stainless steel vats in order to gain creaminess and volume in the mouth. After bottling, the wine aged in bottle for 3 months before being placed on the market. It presents an intense aroma, of mineral character in balance with floral notes of roses and violets in harmony with aromas of tangerine and grapefruit peel. Acidity and freshness with fruit dominate the palate, very long and creamy with very fresh acidity. Contains sulfites.

The white grape varieties recently introduced in the Alentejo wine estates demonstrate in this wine their oenological characteristics to produce quality wine in the region of Borba. The grapes coming from vineyards with moderate productivity allow to obtain a fresh, balanced and structured wine. Harvest was performed manually and in the morning so that the temperature of the grape at the entrance to the cellar is optimum. The grapes were transported in small quantities. After crushing and total destemming of the grapes, a slight skin maceration followed by pressing, decanting by the system of cold for 24 hours and alcoholic fermentation, 30% of the wine in French and American oak barrels, with strict temperature control at 15 ° C. Full, intense aroma of ripe tropical fruits and vanilla. Flavor velvety, with structure and freshness, citrus fruits and light spicy honey to predominate. Wine harmonious, long and of great balance.
