Made from molasses, with a one-week fermentation and distilled using a blend of Port Mourant pot still and column still, the rum was distilled in 2007. It aged for 13 years in 200L bourbon barrels in the tropics, followed by 2 years in 350L Ferrand casks in Europe, gaining deep and rich complexity.
On the nose, it is intense and rich, with pastry notes of cocoa and almond, vanilla, and lime peel. The palate is rich and oily, following the nose with hints of flowers and orange, tobacco, raisins, berries, almond, and hazelnut, complemented by deep notes of balsamic and molasses, almost smoky, with leather and medicinal ginseng. The finish is very long, spicy, and fresh, with pepper, cinnamon, nutmeg, licorice, and chocolate.
