The grapes were harvested by caste and field, and at the time a rigorous qualitative selection was carried out. After gentle destemming and pressing, the grapes were transported by gravity to small stainless steel vats with temperature control, where they were vinified, caste to caste. The grapes that make up this wine were destemmed and fermented in an open press with manual treading. Malolactic fermentation and prolonged aging of 20 months in new (70%) and used barrels, both in French oak. Naturally stabilized wine during prolonged aging in barrels. 1400 bottles were produced. Complex and well-defined aroma, with notes of ripe cherry, blueberry and light floral traces. Cedarwood, forest floor, tobacco box and spice add aromatic complexity. In the mouth it proves to be an elegant wine, full of minerality and freshness, reflecting well the limestone soils from which it comes. It is simultaneously a deep, structured and complex wine, with a long and persistent finish.
