Grafting is born from the heterogeneity of the concept, since every year is different in edaphoclimatic conditions. From this differentiation, a wine was created based on the best behavior of the grape variety in the wine year. In the case of Casa da Passarella Enxertia Jaen, fermentation took place in a cement vat with spontaneous fermentation. 12 months in barrel and 18 months in bottle. The entire stabilization process resulted from mininmalist and natural processes. It is an opaque red wine, spicy notes of black pepper with vegetables. Ribeiro Santo Touriga Nacional Red

Ribeiro Santo Touriga Nacional is a concentrated wine, ruby color with violet lavas. Expressive aroma with blackberries and cherries, field flowers and notes of spices. Medium body, mineral, with a good acidity to give freshness, fine tannins and final firm and spicy. The harvest took place at the end of September. The grapes were harvested manually, for small boxes of 18 kg, according to a careful selection of the best grapes in the vineyard. The grapes were completely destemmed for small stainless mills, where they macerated 24 hours at low temperature, before beginning the alcoholic fermentation, with indigenous yeasts at controlled temperature. The alcoholic fermentation lasted about 15 days, with gentle remonstrances for a good extraction of color and aromas. After fermentation, it was transferred to new French oak barrels, where it remained for 12 months until bottling. Contains Sulfites.
