Adega Mayor Baga Red is a testament to winemaking dedication and art. The result of manual harvesting and a meticulous selection of bunches, the grapes are de-stemmed and fermented at a controlled temperature in 5000 L French oak vats, where they also mature for 18 months. This care and attention to detail ensure the exceptional quality of this wine which, after bottling, rests until it reaches the ideal point to be enjoyed. With a bright ruby ​​color, this wine unfolds on the nose with fresh and complex aromas, highlighting dehydrated red fruit, hints of forest and touches of orange, all delicately wrapped in balsamic notes. In the mouth, it is light, revealing a solid structure, smooth and well-integrated tannins, and a balanced acidity that enhances the presence of the fruit, leading to a seductive, delicate and elegant finish. Adega Mayor Baga Red is a sublime Alentejo interpretation of the Baga grape variety, capable of awakening all the senses. Vinification of Syrah and Touriga Franca in open presses with automatic treading and high extraction work. Alicante Bouschet vinification in stainless steel vats at lower temperatures (26ºC). The aim is to extract the structure of Syrah, the sharp tannins of Touriga Franca and the freshness, exuberance of fruit and elegance of Alicante Bouschet. The batch spent 8 months in new French oak barrels. Encantado shows all the vitality of Touriga Franca that serves as a great base for this wine. The angular and present tannins, the ripe fruit in balance with the aromas of the forest it presents, make it a table companion. The barrel present, but without helping the one-dimensionality of the set, makes this wine a wine with layers that rise throughout the tasting. Contains sulfites.

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.
