Vinha do Jeremias Single Vineyard Red

Manual harvest in 15 kg boxes. Aging for 12 months in new American and French oak half barrels. The grapes are destemmed and carefully selected at the hand picking table. After crushing, they are trodden in marble vats with the traditional foot treading. It is transferred to a stainless steel vat where the alcoholic fermentation ends. This is followed by 12 days of post-fermentation maceration. A great aromatic concentration, highlighting mineral notes, spices and even some hints of dark chocolate and ripe fruit. It is a powerful, elegant and smooth red, with compact tannins and great final persistence. Contains sulfites.

After destemming and gentle crushing, a 4-day pre-fermentative maceration was performed to increase its complexity. Fermented at 26ºC with gentle pumping over, preserving the fruit and extracting smooth tannins important for the balance of the final wine. Wine with an intense, complex and attractive aroma. A blend of aromas from the most fruity side to the most shrubby side. In the mouth it presents volume, very well integrated tannins and good acidity, which make it an extremely "greedy" wine. The grapes were vinified separately in 500L (Spin-Barrel) rotary barrels, with further aging for 12 months in 225L barrels of wood of different origins, and another 12 months of aging in the bottle where it continues to stand. The grapes are harvested into small boxes and received in the property's cellar. Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to fermentation vessels using a peristaltic pump. Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. Aging 50% of the batch aged for 6 months in third and fourth year 400L French oak barrels. The relatively fresh cycle of the year is reflected in the elegance and clarity of the aromas, which denote pine and eucalyptus and also notes of rose bush. It also reveals hints of raspberry and currant. In the mouth it is very fresh, with wild fruit flavors complemented by spicy notes from fine tannins, as well as cloves and nutmeg. Very pleasant right away, but it will improve a lot with another year or two of evolution in the bottle.

Quinta do Crasto Reserve Old Vines aged in French oak barrels (85%) and American oak barrels (15%), where it remained for about 18 months. The grapes from Vinhas Velhas were transported in boxes of 22 kg capacity and subjected to rigorous sorting on a table of choice at the entrance to the cellar. After a complete destemming and a slight crushing, the must was transferred to fermentation vats in stainless steel with controlled temperature. At the end of the alcoholic fermentation, a soft pressing was carried out. With a deep ruby ??color, it impresses on the nose for its extraordinary freshness and complexity, with fresh aromas of forest, where fresh notes of rock rose, and seductive aromas of wild Douro fruits stand out. Quinta do Crasto Tinta Roriz Red

The grapes from the best Tinta Roriz field at Quinta do Crasto were transported in boxes of 22 kg of food plastic and subjected to a rigorous sorting at the entrance of the winery. After a traditional mill tread, the masses were transferred to an open-top stainless steel vat and mechanical stems where they were fermented for 10 days at controlled temperature. After the alcoholic fermentation the grapes were gently pressed in hydraulic presses. Aged in new barrels of 225 liters of French oak for 18 months. It has an opaque, violet color laden with aroma of excellent aromatic intensity, where notes of ripe red fruits stand out, fresh notes of esteva, which resemble menthol notes. Very complex and inviting aroma. In the mouth has a powerful beginning, evolved to a wine of great volume, massive tannins but of elegant texture. All very well wrapped in retro nose scents that resemble red fruits. A very gastronomic wine of seductive character that finishes balanced and persistent. Contains Sulfites.

Malolactic fermentation took place in new French oak casks, where the wine aged for 18 months. Dark ruby color. Fresh notes of black fruits on the nose without over-ripening, all well matched and balanced with new wood, good volume in the mouth with a refreshing acidity to balance the concentration of the wine, the tannins are present but ripe. Strict selection of bunches on the selection table. Perfect conduction of malolactic fermentation that occurs prior to alcoholic fermentation. Aggressive maceration, in order to extract the maximum amount of natural antioxidant compounds and other phenolic compounds at 22ºC. In the mouth it is fresh, full-bodied with a slight chocolate character and a rare finish. Primary aromas of black cherries and wild fruits typical of the variety. This wine accompanies meats, cheeses and Mediterranean cuisine in general. Decant before consuming. Serve between 15 and 16ºC.
