15 months in French oak barrels of 225 and 400 liters (new and second use). 2012 was an exceptionally dry year. In late February, much of the Douro Valley was suffering from extremely dry conditions. The vines, however, adapted to water stress, developing shorter shoots and with fewer leaves, which, combined with the small number of clusters, reduced the need for water. This, together with summer temperatures a few degrees lower than average, allowed the vines to remain active, with the grapes reaching good levels of phenolic maturation and maintaining an aromatic profile of great freshness and intensity. With the grapes selected by hand on a mat of choice and using the vinification in new fermentation vats fed by gravity, this Quinta do Vesuvio 2012, aged fourteen months in French oak before being bottled. In 2016, when the 25 years dedicated to the production of wines from Bairrada are celebrated, João Póvoa marked the moment with the launch of Kompassus Baga 1991 - Private Collection. A wine that, as the name suggests, is part of its personal estate, kept since it was established in the production of wines with a trademark registered in 1991. The Kompassus Baga Private Collection 1991 is unique for the rare quality and quantity, and for this reason is released annually in limited quantities of 25 bottles. It is a commemorative edition and belongs to a Super Premium category. Made exclusively from the Baga variety, it was fermented in an open winery with sugar and aged in a 3000 liter tonl for a year and a half. In order to ensure the preservation of its quality for a quarter of a century, we only replace the cork so that it can be drunk and enjoyed without any embarrassment. Quinta das Marias Encruzado White
Manual harvesting in 20 kg boxes. The grapes were destemmed and crushed, followed by cold skin contact for 18 hours. After pressing and static decanting, alcoholic fermentation took place in a stainless steel vat with controlled temperature (18 ºC) for 17 days. After the fermentation, it was aged on fine sludge for 3 months, and bâtonnage was carried out during the first month and a half. For almost 15 years, Quinta das Marias has produced 100% wine from the Encruzado variety. Encruzado is probably one of the least expressive Portuguese white varieties while young, expressing its full potential over several years in the bottle. Contains sulfites.
