100% Touriga Nacional grape variety. A special parcel in our Quinta do Ribeiro Santo. Harvest by hand. Total destemming and decanting at low temperatures for 24h. The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. Delicate and engaging aromas of apricot, some tangerine and slight toast. Lovely harmony between acidity and structure. Fine bubble offering complexity and freshness. Creamy body with incredible depth. Will age beautifully in bottle. Contain sulfites.

Grapes de-stemmed with skin maceration, pressing and fermentation. Aging for 18 months in bottle on fine lees. Dégorgement without added sugar – Brut Nature. Notes of biscuit, quince, citrus fruit, beautiful presence in the mouth, fine, fresh, firm, persistent. Contains sulfites.

The grapes after being harvested by hand are gently pressed in a vacuum press. After a slight decantation, the must fermented with native yeasts in a 650-liter hull and stainless steel tanks at below 16ºC. The 3B (Baga and Bical from an Atlantic region started by B …) was born from the desire to create a traditional method, aromatic, refreshing, honest and elegant based on the native grapes of vines that respect the farming tradition of the region. After a very delicate pressing of the grapes, the must was fermented for 15 days in stainless steel vats at controlled temperature. This was followed by extraction with free yeasts, with re-fermentation taking place in a cellar for 25 days at 14 ºC, followed by a 60-month aging period in bottle on lees. Pink color defined with hints of onion skin, aromas of acidic red fruits, buttery notes, evident toasted notes and beeswax, among other aromatic notes of a rich and complex palette. It has great gustatory complexity, very fresh attack, and excellent texture. The mousse is creamy and has good gustatory persistence. Contains sulfites.

The grapes are unloaded into the membrane press, where they are crushed and the must is extracted. The must is cooled, decanted and transferred to a stainless steel tank where it will undergo fermentation, with temperature control. After fermentation, the wine naturally settles in the tank, being cleaned at the end of the year, when it is prepared to carry out the bottling of sparkling wine, with free yeasts. The bottles of sparkling wine go to the cellar to carry out the fermentation in the bottle at a controlled temperature and in the absence of light. After fermentation, the bottles are kept in the cellar, where they are staged until regrinding and degorgement are carried out without the addition of sugar, at which point the product is ready for commercialization. Young, slightly golden in color, fruity with an elegant aroma, very fine and velvety bubble that melts in the mouth, with a present acidity that gives it a good presence in the mouth, in a creamy, fresh and balanced set.
