The Encruzado variety is exclusive to the Dão region, it is very balanced, aromatic and gives the wines great longevity. The plants grow on slopes between 350 and 400 meters in altitude. The vineyard is managed within an integrated protection program, and the application of herbicides is prohibited. Weed control is carried out with soil tillage. The harvest is manual, when they reach the optimum point of maturation, situated in the 2nd fortnight of September. Contains sulfites.

The grapes are crushed with partial destemming, followed by light automatic pressing. The must was managed by gravity and decanting, fermentation took place at temperatures between 16 and 18 ºC. After fermentation, the wine was set on lees with a nitrogen-based bâtonnage. The wine was stabilized by cooling and light filtration before bottling. Golden color, balanced with good fullness. There are notes of white pear, butter, underripe yellow plums, lemon blossom, chamomile flowers and a nice aftertaste of camphor. Contains sulfites.

Clear / bright appearance, with a greenish citrus color with medium intensity.
On the nose it presents notes of white flower (marigold), light citrus (very ripe lemon) and some wax, but discreet.
Very evident notes of minerality on the nose. In the mouth it is dry and round with an interesting myth greasiness.
Medium / high acidity, very elegant with evident notes of wax and some smoked. Enough mineral, makes it have
in the mouth a “crunchy” character. Very long aftertaste with notes of ripe lemon peel and some
butter / yogurt. Contains sulfites.
Quinta de Saes Reserva White

Predominantly elaborated from the Encruzado 80% and Cercial 20%, this wine fermented two months in small volumes, followed by batonage and bottling. Well married tropical fruit with good minerality and long acidity. Elegant and soft-textured, this "reserve" of the "Saes" line is an example of the great whites still alive in Dão. Contains Sulfites.
