Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.
Quinta do Serrado Touriga Nacional Red
Vinification is made from the selection of grapes created in Quinta do Serrado and Quinta do Mosteiro. All grapes are harvested by hand, harvested at the ideal time of maturation, combined to produce this top quality wine, which aged for 12 months in French and American oak barrels. It has an opaque purple color, full-bodied, intense, persistent and structured flavor. With round tannins. Contains Sulfites.
Quinta dos Carvalhais Tinta Roriz Red
Ruby colored wine, very young. On the nose there are aromas of ripe black fruit, notes of pine and pine needles and nuances of truffle and moss. Subtly also appear the barrel notes, where the wine passed for 18 months. In the mouth, it is surprising for its freshness and firm tannin with claw, but refined. It is a wine with a good volume in the mouth, with a long and balanced finish. Contains sulfites.
