The grapes are harvested into small boxes and received in the property’s cellar. Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to fermentation vessels using a peristaltic pump. Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. A period of post-fermentation maceration is carried out to promote the extraction of tannins from the seeds — complementary to the tannins from the skins — in order to favor the structure and accentuate the aging potential. Very deep color, with hints of crimson on the edge. The fresh and mineral aromas denote the altitude and the shale and granite soils of Fonte Souto. A graphite note reflects minerality and hints at forest vegetation. Some fruits are discretely present, blueberry initially and, as the wine opens, some distinct strawberry notes. Very reserved on the palate, starting to show black plum, dark chocolate, and a licorice nuance. Peppery tannins and a bright acidity support a substantial structure, which needs some more time in the bottle for the wine to fully reveal its unique character.
