Manual harvest into 12 kg boxes during the early hours of the morning. Cooling of the grapes in a refrigerated chamber for 24 hours to 10ºC. Manual selection on a vibrating sorting table, followed by destemming and light crushing. Vacuum pressing, followed by cold decanting for 48 hours. Individual fermentation of each variety in 500L French oak barrels and modern oval-shaped cement vats, for approximately 20 days. After alcoholic fermentation, it aged for six months on fine lees (sur lies) with periodic battônages. Aroma of great complexity, ripe citrus, mineral notes and very light barrel. In the mouth it stands out for its creaminess and breadth, always in a fresh, elegant and harmonious register. The excellent acidity prolongs the tasting and will allow excellent evolution in the bottle. .
