Classic fermentation with simple maceration for 6 days. Malolactic fermentation. Wine of intense ruby color, with an aroma of ripe red fruits, with expressions of gooseberry, blackberry jam and complex nuances of cassis. The flavor is round and soft, vast with a good balance of tannins and a characteristic structure of the grape variety. Reveals the creased character with a long and persistent finish of mouth.

Manual harvest for 12 kg boxes. Cooling of the grapes in a refrigerated chamber for 24 hours to 10ºC. Manual selection on a vibrating sorting table, followed by direct vacuum pressing, with the whole grape, Blanc de Noirs technique. Cold decanting for 48 hours. Fermentation in temperature-controlled stainless steel tanks for 16 days. Bâtonnage weekly for two months. Pale salmon color. Exuberant aroma of fresh fruit, blueberry and floral notes. In the mouth, the excellent acidity gives it a notable freshness, it has good structure and a full and tasty finish.

It is a tanned white made with Malvasia-Fina grapes and a brief aging in barrels. In the past, they called it liquid gold and it was served at the table of many Beira manors.
Crushing with total stemming, fermentation was spontaneous with skin maceration for 15 days in stainless steel vats and aging for 6 months in used French oak barrels. The blend was made with the varieties 40% Encruzado, 30% Malvasia-Fina and 30% Cerceal-Branco.
Straw yellow color, delicate aroma, creating anticipation for the mouth tasting. Intense flavor, fresh, elegance, with enormous complexity.
To drink now, but with enormous aging potential, which will allow it to acquire great complexity. Serve at 16°C without decanting. Ideal to accompany grilled crustaceans, delicate fish or white meats.

Recognized for its potential and uniqueness of the terroir, they are born unique wines, distinguished by the elegance, freshness and potential of aging, unique attributes of the best wines of the Dão region. Crushing with total destemming, prolonged and smooth skin maceration, alcoholic fermentation at 26ºC. Maturation during 18 months in new French oak barrels with weak toasted. Intense garnet color, sui generis aroma and flavor with a lot of harmony, elegance and notorious persistence, which make it distinctive to accompany sublime delicacies.

Monólogo Malvasia Fina White

Grapes reception in the cellar in 24kg boxes. Manual selection followed by destemming, skin maceration and gentle pneumatic pressing. The must ferments in stainless steel vats at low temperature. Stabilization and light filtration. Special care was taken in the winemaking, minimizing any intervention, with the aim of producing a wine that expresses well the particularities of the grapes and terroir. Produced at Quinta de Santa Teresa, with grapes from the P70 plot, this Monólogo is a monovarieous wine with an aromatic profile, long in the mouth and persistent. These characteristics, typical of the variety, have been appreciated since ancient Greece, where Malvasia Fina comes from. On the nose we find freshness and smoky aromas, quartz and nutmeg. On the palate it is pleasant, balanced and unctuous, showing notes of granitic influence, spices and pear. Contains sulfites.
Luis Pato Vinhas Velhas White

Pale straw color. A nose of orange peels and a rhombus of some tropical hybrid fruit left, something between sapoti, feijoa and melon. It has a really plush viscosity, but through a very clean, persistent acidity line. The moment it finally slides out the tongue, most of the orange has turned tangelo and faded. It is a very rewarding adventure that is never more frightening.
