Transport in 20 kg boxes and total destemming. Step on foot in traditional granite presses. Alcoholic fermentation in a wine press for 8 to 10 days with continuous work and controlled temperature. Aging in French oak barrels where it remains for 16 months. It presents an elegant and fresh palate, revealing great balance in the whole. Contains sulfites.

Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were completely destemmed in small stainless steel vats, where they were macerated for 24 hours at low temperature, before starting alcoholic fermentation, with indigenous yeasts and controlled temperature. Alcoholic fermentation lasted 15 days, with mechanical treading for good extraction of color and aromas. After fermentation, it was transferred to new 225L French oak barrels, where it remained for 9 months until completing the malolactic fermentation here. Notes of berries, spices and floral notes typical of the variety. In the mouth it is enveloping with good acidity and a very elegant mineral background.

Esporão Private Selection Red: Syrah and Aragonez were fermented in small stainless steel mills, with alternating step-by-step with short manual overruns done 2-3 times per day, depending on our daily taste throughout the fermentation. We prefer to ferment the Alicante Bouschet in a small stainless steel tank and we did the reassemblies manually. The reason for this choice is that this caste has a relatively brittle film, which may lead to an exaggerated extraction of tannins. After pressing, we kept the wines separated, in order to better understand the evolution of each one. The malolactic fermentation took place in the barrels and spontaneously. 30% in new barrels and 70% in used barrels (1 year), of 225l French oak barrels (Taransaud; Saury; Boutes). After 18 months of internship, during which we only made a transfer immediately after the malolactic, we made the final lot, which was bottled on May 28, 2014, only with a slight filtration and without any type of bonding. In the nose predominates the black fruit with slight notes of smoke and spices. In the palate it shows density and richness, shows itself balanced, with good acidity and fine tannins. The ending is long and persistent. Contains Sulfites.

A wine of little color intense, limpid and bright, without any sign of aging. Aromativ, dominated by spices and with wood still well present, in a background of ripe black fruit and chocolate, in an elegant and pleasant set. A wine of little extraction, who excels in elegance, despite being still too young, still with some astringency to score. Dry, good fruity, broad and very persistent, with intense, dry and slightly spicy finish, with a slight bitterness of the wood and a pleasant vegetable and menthol touch, with discrete but present black fruit.

The grapes, from a specific plot, were fermented in 228 and 400 liter barrels with indigenous yeasts in which they remained for 10 months until 2000 bottles were filled. Finally, they aged 16 months in the basement until they were launched on the market. Pale and greenish-yellow appearance, intense nose with light orange blossom, dried grass, peach, grapefruit, lime, white pepper, biscuit and wet stone. In the mouth it is dry, medium body, intense and long finish. An extremely complex wine but not very intense with aromas. Some floral, fruity and mineral aromas are not overlapping. All intertwine harmoniously. This reference is very creamy, complex and engaging but also austere, sophisticated and elegant. A luxury Dão that pays a great tribute. Contains sulfites.

Manual harvest and direct press with whole bunch. Fermentation took place in stainless steel vats, followed by aging on fine lees for 8 months. Very light pink, notes of fresh red fruits and light floral. Very fresh reflecting the good acidity that it has, in an enveloping and smooth set. Contains sulfites.
