The Encruzado grape variety is recognized for its superior capacity for positive evolution, both in barrels and in bottles. The Past explores precisely this characteristic, in this case a long period of maturation in oxidative conditions in used French oak barrels. The result of the practice used is a wine of great aromatic complexity, which combines tertiary aromas of evolution, such as fresh apple, banana and ripe peach, with notes of dried fruits, tea leaves and vanilla that also appear in the mouth, of great volume and tempered by an excellent and striking acidity characteristic of the grape variety. Contains sulfites.

The grapes were completely destemmed and immediately pressed in a pneumatic press. The tear must was cooled and decanted at low temperatures for 24h. The clean must started fermentation in stainless steel, with indigenous yeasts and controlled temperature. 75% Aged in temperature-controlled stainless steel vats to enhance the aromas of the grape varieties, and 25% in 500lt French oak barrels. This rose on the nose presents aromas of red fruits in the mouth it is wide and voluminous with a medium finish.
