Using grapes from the most typical varieties of Alentejo, produced in the sub-region of Borba, the wine Rótulo Cortiça was created, a true flagship of Adega de Borba. Sourced from old vines, the grapes underwent strict monitoring of ripening and were harvested in small quantities. At the winery, after destemming and gentle crushing of the grapes, alcoholic fermentation began, lasting around 10-15 days at a controlled temperature of 24ºC, to maximize extraction of the fruit’s aromas and flavors. To enhance polyphenolic complexity, tannins, and wine structure, it remained in tank for a post-fermentation maceration process. Malolactic fermentation later took place in stainless steel containers. To elevate and enhance its organoleptic characteristics, the wine aged for 12 months in 3rd and 4th year French oak barrels and exotic wood vats, followed by a 6-month bottle ageing in the cellar. Fine and elegant aroma, suggesting black fruits, compote, and white chocolate. Contains sulfites.
