Pneumatic pressing. Natural enzymatic sedimentation for 12 to 24 hours at about 15 ° C and fermentation with indigenous yeasts, partly in stainless steel vats, partly in barrels. Systematic malolactic fermentation followed by assembly after 8 to 10 months. It is the sunniest "climate" in Chablis, facing south. This cozy environment, combined with a very rich terroir, always offers very opulent and very open wines, with white fruits (pear and peach from the vine), but also white flowers like the very aromatic "philadelphus" or the simulation of orange. This aromatic power and richness usually mask the minerality that remains discreet in the early years. On the other hand, after 7 to 10 years, the fruit gives way to aromas of oyster shell and sea air, taking the wine back to its origins. Therefore, it can be drunk young on its fruits with fresh starters based on raw vegetables or waiting for several years if it is desired to combine seafood. Contains sulfites.
