Originating from Barbados, Mauritius, and the Fiji Islands, this rum is crafted from molasses and cane juice, fermented from 3 days to 3 weeks, and distilled in pot and column stills. It ages for several years in Bourbon barrels in the tropics before spending an additional year in Ferrand casks in Europe, gaining unique complexity.
On the nose, it opens gently and richly with notes of pear, quince jelly, and gooseberry, enhanced by hints of smoky molasses. The palate is rich and delicate with flavors of clover honey, licorice, beeswax, vanilla fudge, and prune. The finish is long and lingering, with notes of cooked apple, tonka bean, and dried banana—a true celebration of craftsmanship and the adventurous spirit.
